I know that anchovies are a love or hate relationship or even for some an acquired taste. I happen to seriously like anchovies in about any form. Beside tapenade, anchoïade is one of my favorite Mediterranean spread.
- 80 gr. of anchovies fillets in oil it should be a small tin or jar of 200 gr with its oil.
- 20 Black olives
- 2 small tomatoes, cubed
- 2 garlic cloves, minced
- 1 tsp of fresh thyme
- 1 tbsp. of fresh parsley
Put everything in a food processor and mix to a fine thick paste. In the event the mixture is too liquid because of too much oil put one or two slices of bread or ¼ cup of bread crumbs and mix again. Of course, add olive oil if it is too thick.
Serve with slices of French bread. I have served mine on my brown bread.
