  1. I like eggplant, too, and often use your second way of cooking them. I also stuff them with ground lamb and rosemary, very nice. I’ll have to look up what tahini is, as I’ve never used that before.

  2. so simple, and yet so perfect. I’ve also sometimes pureed the eggplant with white beans as well, mostly because my husband doesn’t think he likes eggplant!
